This pourer serves as a unique server for slowly adding water and sugar to your absinthe.
A dose of absinthe is first poured into the glass. Although a typical portion is 30 ml, the quantity depends on the size of the glass used. The pourer is placed on the rim of the glass, then ice and sugar cubes are placed on the round tray beneath the funnel. Ice is added to the funnel and small quantities of water are poured in at short intervals. The cold water begins to flow, or drizzle, through a hole in the bottom of the funnel onto the tray containing the sugar cube below. The speed at which the water falls onto the sugar determines the speed at which the sugar will dissolve. Once the sugar water mixture falls into the absinthe glass. The absinthe can then be sampled and more water (and sugar) added if desired. The most important thing to remember when preparing absinthe is that it should be made to the drinker's taste.
