Like our absinthe spoon Stained glass window, this ornate piece resembles a stained-glass window. Because of this detail, in France, the spoon is commonly called "l'ouvragee" (elaborate in French). The slender spoon features 8 crosses on the grill and a pronounced notch on the handle. It is also an exact reproduction of a late 19th-century absinthe spoon.
This spoon is used in the preparation of a traditional French or Swiss absinthe. A traditional absinthe is prepared by pouring an ounce of absinthe into an absinthe glass, then placing the absinthe spoon on the glass and a sugar cube on the spoon. Iced water flows slowly from a fountain, carafe or balance on the sugar cube. The cold sugar water then flows from the spoon into the absinthe glass, releasing oils and perfuming the air with fennel, grand wormwood and anise. The combination also begins to take on a milky white color, as the water mixes with the anise.
