A must-have for every absintheur, this Balancier is another way of adding water (and optional sugar) to a traditional absinthe. Sometimes called the Cusenier "Auto Verseur" or rocker, due to the movement of the lever during use. This piece is intended to be used for a single portion.

To use, first pour a dose of absinthe into an absinthe glass (quantity depending on the glass used). If using sugar, place an absinthe spoon on its rim and a sugar cube on the spoon. The Balancier is then placed on the rim of the glass and above the spoon, with a lever located above the sugar cube. Ice and water are then added to the inside of the reservoir. Once the water begins to flow through a small hole at the bottom of the reservoir, it flows over the lever, which creates a swinging motion distributing the water over the sugar cube, thus falling into the glass of absinthe. All absinthes should be made according to your personal preferences. Add more water or sugar if you prefer. Remove, stir in, and enjoy!
