This round grate is a wonderful reproduction of an antique absinthe grate and has a large surface area to hold a sugar cube used in the absinthe ritual. This piece works well on most absinthe glasses, whatever their size, thanks to its large open grid. The three arms sit on the glass and are used to hold the sugar cube. This is an exact reproduction of a late 19th or early 20th century absinthe spoon.
This grid is used in the preparation of a traditional French or Swiss absinthe. A traditional absinthe is prepared by pouring an ounce of absinthe into an absinthe glass, then placing the absinthe grill on the glass and a sugar cube on top of the grill. Ice-cold water flows slowly from a fountain, carafe or rocker over the sugar cube. The cold sugar water then flows from the grate into the glass of absinthe, releasing oils and perfuming the air with fennel, grand wormwood and anise. The combination also begins to take on a milky white color, as the water mixes with the anise.
