This type of spoon is one of the oldest of all absinthe spoons and is commonly called a "playing card spoon" because of the card designs on the grill in the middle of its handle. The grill is used to hold the sugar cube during the preparation of a traditional French or Swiss absinthe.
Drinkers would turn the spoon upside down and place it on the glass to hold their sugar cube. A traditional absinthe is prepared by pouring an ounce of absinthe into an absinthe glass, then placing the absinthe spoon on the glass and a sugar cube on top of the spoon. Ice-cold water flows slowly from a fountain, carafe or rocker over the sugar cube. The cold sugar water then flows from the spoon into the absinthe glass, releasing oils and perfuming the air with fennel, grand wormwood and anise. The combination also begins to take on a milky white color, as the water mixes with the anise.
