This gold-plated reproduction of an absinthe spoon comes from Switzerland, the birthplace of absinthe. In addition to the cross in the middle of the grid representing Switzerland's national emblem (a predominant element of their flag), the Swiss cross is best known as a sign of quality in the world of absinthe. This cut-out cross allows the sugar and water to fall easily into the glass of absinthe.
This spoon is used in the preparation of a traditional French or Swiss absinthe. A traditional absinthe is prepared by pouring an ounce of absinthe into an absinthe glass, then placing the absinthe spoon on top of the glass and a sugar cube on top of the spoon. Iced water flows slowly from a fountain, carafe or balance on the sugar cube. The cold sugar water then flows from the spoon into the absinthe glass, releasing oils and perfuming the air with fennel, grand wormwood and anise. The combination also begins to take on a milky white color, as the water mixes with the anise.
