A brouilleur is a simple server for one and is used to slowly add water to absinthe. Using a brouilleur, the water can gradually combine with the absinthe, releasing its essential oils and perfuming the air with a scent of anise and fennel. They're also a wonderful way to observe the louche process (the color change in absinthe that occurs when the anise in wormwood begins to react with water to become milky white).
Muddlers can be used with or without sugar. If you prefer to use sugar, a cube (or cubes) can be added to sweeten the absinthe to taste.
