This very popular spoon is commonly called the "hearts" absinthe spoon because of the small cut-outs in the center of its handle, which resemble four little hearts. Absinthe spoons like this one are exact reproductions of the oldest of all absinthe spoons. The first absinthe spoons resembled what we would today call a teaspoon. This high-quality stainless steel absinthe spoon is used to hold the sugar cube during the preparation of a traditional French or Swiss absinthe. Drinkers would turn the spoon upside down and place it on the glass, with the sugar cubes placed in the "heart" cut-outs. This absinthe spoon is also one of the longest, allowing it to fit most glasses. It is an exact reproduction of a mid-19th century absinthe spoon.
A traditional absinthe is prepared by pouring an ounce of absinthe into an absinthe glass, then placing the absinthe spoon on top of the glass and a sugar cube on top of the spoon. Iced water flows slowly from a fountain, carafe or balance on the sugar cube. The cold sugar water then flows from the spoon into the absinthe glass, releasing oils and perfuming the air with fennel, grand wormwood and anise. The combination also begins to take on a milky white color, as the water mixes with the anise.
